Lunch on the go....



I ate lunch pretty fast again today...this whole week is going to be a little crazy it seems. I had some steamed broccoli with my famous turkey meatballs. I also had a really good apple. It was the perfect combination of crunchy, crispy and juicy. All day I was snacking on the trail mix pictured, and actually finished the container. Derek and I will probably go hiking or to the gym this afternoon...we'll see!

Dinner, Workout, Breakfast





For dinner last night i had my first ever baked ziti. I was made with ww pasta, part skim mozzarella, diced tomatoes and a lot of spinach. I prepared it all on Saturday and just had to slip it in the oven last night while I made the salad. Yum! (For a snack while I was tutoring I had some baby carrots.

This morning I had a workout set up by my running group. They are meeting at 7:30am, which is too late for em to go to school so I had to do a 4 mile time trial on my own. It was hard work running fast! I rounded out the workout with 15 minutes of abs.

For breakfast I had a large amount (1.5 cups) of skim mixed with CIB, a grapefruit and one of my new breakfast muffins. Off to get ready for the kids!

Afternoon Snack


I knew I would be hungry and the perfect (maybe not for my arteries, but for my taste buds) treat appeared. In the staff lounge was a delicious chocolate cake. I really love that sugary buttery frosting- which I know is so disgusting for you. Oh well, I just had a small piece!

Rushing through lunch....



I really gobbled my lunch today and know that I will have a to grab a snack later on. The turkey meatballs and string beans was good and the raspberry yogurt too. I am trying to get more veggies in- I think I eat a lot of fruit (apple was a snack this morning), but maybe not enough of the greens. I think we are having baked Ziti tonight for dinner...I will have to make a BIG salad with it!

Workout and Breakfast


I had a good workout this morning and I think it will be a good start to the week. I did 45 minutes on the elliptical, 5 minutes of rowing and 20 minutes of strength training for about 600 calories.

For breakfast I had one of my new breakfast muffins a smoothie with fage yogurt, frozen blueberries and strawberries + flax seed and a banana. This is a very busy morning but I will post more later.

Dinner


Dinner tonight was very simple. I wasn't very hungry, but knew I needed something so that I would have a good workout tomorrow morning. So I had my famous bagel sandwich with tofurky, a lot of spinach and hummus. I also had some cut up red pepper on the side. Tomorrow will be a very busy day so I am pre-packing my lunch. Have a good night!

Whoa Lunch!






We had lunch at Derek's Aunt and Uncle's house in Fort Collins. There was a ton of food- and I ate a lot of it! First we had appetizers, delicious cheese and crackers, plus tomato and mozzerella. They had ordered on Chinese food for lunch. I practically gre up eating Chinese at least twice a week, but I rarely have it now. It was such a treat- I had two plates full. Then of course, we had birthday cake- there were two kind available, but I held back and only had one slice of ice cream cake. It was so fun to hang out with everyone, and a really good eating experience.
