Lunch on the go....



I ate lunch pretty fast again today...this whole week is going to be a little crazy it seems. I had some steamed broccoli with my famous turkey meatballs. I also had a really good apple. It was the perfect combination of crunchy, crispy and juicy. All day I was snacking on the trail mix pictured, and actually finished the container. Derek and I will probably go hiking or to the gym this afternoon...we'll see!

Dinner, Workout, Breakfast





For dinner last night i had my first ever baked ziti. I was made with ww pasta, part skim mozzarella, diced tomatoes and a lot of spinach. I prepared it all on Saturday and just had to slip it in the oven last night while I made the salad. Yum! (For a snack while I was tutoring I had some baby carrots.

This morning I had a workout set up by my running group. They are meeting at 7:30am, which is too late for em to go to school so I had to do a 4 mile time trial on my own. It was hard work running fast! I rounded out the workout with 15 minutes of abs.

For breakfast I had a large amount (1.5 cups) of skim mixed with CIB, a grapefruit and one of my new breakfast muffins. Off to get ready for the kids!

Afternoon Snack


I knew I would be hungry and the perfect (maybe not for my arteries, but for my taste buds) treat appeared. In the staff lounge was a delicious chocolate cake. I really love that sugary buttery frosting- which I know is so disgusting for you. Oh well, I just had a small piece!

Rushing through lunch....



I really gobbled my lunch today and know that I will have a to grab a snack later on. The turkey meatballs and string beans was good and the raspberry yogurt too. I am trying to get more veggies in- I think I eat a lot of fruit (apple was a snack this morning), but maybe not enough of the greens. I think we are having baked Ziti tonight for dinner...I will have to make a BIG salad with it!

Workout and Breakfast


I had a good workout this morning and I think it will be a good start to the week. I did 45 minutes on the elliptical, 5 minutes of rowing and 20 minutes of strength training for about 600 calories.

For breakfast I had one of my new breakfast muffins a smoothie with fage yogurt, frozen blueberries and strawberries + flax seed and a banana. This is a very busy morning but I will post more later.

Dinner


Dinner tonight was very simple. I wasn't very hungry, but knew I needed something so that I would have a good workout tomorrow morning. So I had my famous bagel sandwich with tofurky, a lot of spinach and hummus. I also had some cut up red pepper on the side. Tomorrow will be a very busy day so I am pre-packing my lunch. Have a good night!

Whoa Lunch!






We had lunch at Derek's Aunt and Uncle's house in Fort Collins. There was a ton of food- and I ate a lot of it! First we had appetizers, delicious cheese and crackers, plus tomato and mozzerella. They had ordered on Chinese food for lunch. I practically gre up eating Chinese at least twice a week, but I rarely have it now. It was such a treat- I had two plates full. Then of course, we had birthday cake- there were two kind available, but I held back and only had one slice of ice cream cake. It was so fun to hang out with everyone, and a really good eating experience.

Breakfast + Workout



For breafast I had a bowl of oatmeal with flax and a glass of milk. I might make a smoothie to take on the road to Fort Collins because I don't want to be starving by lunch time.

My yoga class date was cancelled so I went for a 1 hour fast, hilly walk outside (425 cal)! It is not warm, but it is definitely not as cold as it has been. After yesterday's long run it seemed like a good idea to take it easy.

POST EDIT: I had one of these new "healthy" muffins I just baked! 180 cal, 5 grams fiber, 4 grams protein...seem pretty healthy to me...and delicious!

Snacks, Happy Hour/Dinner






Ahhhh...a lazy Saturday afternoon/evening. I had plans to go to Happy Hour at 5:30, but was so hungry at 5 that I had 2 handfuls of trail mix (almonds, cashews, craisings, pumpkin seeds, and yogurt chips). At the bar I had 2 beers (whoa!), a burger and some salad, no dressing. Later I went to go watch some of my students in a soccer game and I think I was dehydrated, my mouth felt like the sahara desert- so I had an Izze- a natural fruit juice soda. There is a lot of school work I could have gotten done last night...I guess I just squeeze it in this morning.

Breakfast, Workout, Lunch




I forgot to take a picture of my breakfast! Good thing it was just of bowl of oatmeal, so it looks like many other mornings this week. I did skip the fruit, becasuse fruit beofre running makes me feel yuck. My running group had a long run scheduled for today - 2 hours!!! After running I had a package of shock blocs, and a mini mojo bar. When I got home I heated up my leftover burrito and added some salsa to it, with an apple and clementine cut up on the side. I have a million things to do this afternoon- but that should keep me going until later!

Dinner




We went out to dinner because we had a coupon...but it still wasn't that cheap! I had a beer and some chips and salsa to start. From our combo tray of appetizers had most of the quesedilla and 2 pieces of taquito. By the time I got to my burrito, I could only eat 1/4 of it and none of the rice....oh well, Derek can eat it for lunch tomorrow. Everything was good, but there is definitely better Mexican food in Boulder.

Lunch


For lunch I went back to the Paradise Bakery- but I was not as impressed by their salads as their sandwiches- it was good,,,but no whole foods! My salad had romain lettuce, cukes, onions and grilled chicken. I also snacked on some trail mix left over from yesterday. We are going to happy our tonight and then to go buy a BED!

**I did get in 40 minutes of walking in the sunshine and it felt so good!

Dinner , Workout, Breakfast






Last night I had an awesome dinner with Aylana's family. We went to my favorite restaurant- Whole Foods! I had a great salad with spinach, peppers, cukes, tofu, and relaly crumbly feta. I put aminos on it- which tastes like soy sauce. Yum. After dinner we went home and sampled some whole foods desserts. I had some of the cheese cake and some of the tira misu- way too much all together but soooo good!

This mornign at the gym started out great- but I felt a little sick halfway through the workout. I made it through 25 minute son the new elliptical and 20 minutes of walking on the treadmill fast with incline. Good thing I am getting in a lot of walking with this conference. I have a pretty long llunch break before my two afternoon sessions so I am going to try and squeeze in forty minutes of more walking.

To settle my stomach this morning I jsut ate the oatmeal and skipped the clementines. But the time I got to the conference I was still feelign yuck and had to eat a bagel to really bring myself back. I hate when this happens becuase it is just empty calories- I was not relaly hungry for it- and it didn't keep me full anyway.

Lunch and Snacks




So after posting I went out in search of lunch. There were not many appealing options at thehotel the conference is at but there is a Paradise Bakery down the street. I had an awesome turkey, lettuce, cucumberm red onion, mustard sandwich on ww bread there. It came with a cookie which was an added bonus. I ate half the sandwich and then used the cookie and other half as well as my orange for snacks throughout the afternoon. I also had a latte AND a diet coke for some extra caffiene. Sitting so much is tiring- even though I am learning a lot!

Workout, Breakfast, CCIRA Conference




I was able to do my regular workout this morning- yea for 24 hour fitness! I was on the elliptical for 40 minutes, did 10 minutes on the stair climber with real stairs and 20 minutes of abs. I went back to Aylana's house for a quick shower and oatmeal with a clementine. I had that weight control oatmeal again- I don't think it keeps me as full as my regular oatmeal with flax. During my first session I snacked on some trail mix- I am planning on this container lasting me the whole 2 days, and an apple. The apple is pretty bruised so I might only eat 1/2 of it. Lunch and Dinner







Today was a busy day- and I felt abnormally hungry. My first period class had donuts and agains my better judgement I had 3/4 of one. I also had my tuna with celery and red onion, a grapefruit, salad and later on for a snack I had strawberries and some pb on a mini tortilla. For dinner I am going to have a bagel sandwich with tofurky, hummus, cheese and spinach wiht a banana and a cookie. I am eating on the road- on my way to Denver for the CCIRA conference...blogging will be sporadic, but it will happen!

Dinner (Tuesday), Workout, Breakfast





The last few hours of blogging has been full of mishaps. Yesterday I left my camera at school, but was psyched to take pics with my new phone. I took them, but can't figure out how to get them on the computer! After school I went to the gym for round 2- walking 4 miles in 50 minutes with 5 minutes of rowing and 5 of stretching- about 400 calories. I had an a orange and a handful of trail mix to ease my hunger while we went to the CAUCUS! When we got home I had a slice of the last of the eggplant parm and a bowl of salad- romain, cukes, and craisins.

This morning I was on the elliptical for 40 minutes, rowing machine for 5, and 20 minutes of strength training. (600 cal)

For breakfast I had a glass of milk, mini pb and j tortilla and I am going to munch on a grapefruit in a few minutes...

Lunch




I had a cup of hot chocolate this morning to help warm up--- the snow inspired me! I had some leftover brown rice, string beans and turkey meat balls with a fat free raspberry yogurt for lunch. I also snacked on the rest of the trail mix- about 1/2 a cup.

Workout and Breakfast



I didn't have a very productive day at the gym today- I think I will have to go back this afternoon. I had planned on a long workout because the caucus is tonight so I will miss my running group. Instead, after about 1/2 an hour on the treadmill (375 cal) I felt sick and had to leave. I am hoping to fit in another hour at the gym sometime today!

Breakfast was a mini pb and j with an orange and water...
